About this savoury

A Cornish pasty is a simple thing, which is exactly why it is so easy to get wrong. Beef, potato, swede and onion, with salt, pepper and butter, sealed in pastry. If you are wondering, swede is what plenty of people here call a rutabaga or a turnip, depending on whose kitchen you are standing in.

Our family spent a lot of time in the Southwest of England learning how it should be done, and the answer is restraint. Aaron, who runs the shop, is from Plymouth, one bridge from Cornwall, so nobody here was ever going to get away with a bad one.

The pastry is a rough puff, made from scratch in our Halifax bakery, and every pasty is crimped completely by hand. No crimping machine, no tool, just thumbs. The beef is free-range, from Oulton's in Windsor, Nova Scotia, and the butter comes from COWS in PEI.

All that thumb work makes it one of the most labour-intensive things we bake, so it tends to go early. Come to our Bayers Lake counter for a Cornish pasty in Halifax, or let Uber Eats bring you one chilled to heat at home. While you are here, have a look at the rest of our savouries.

Enjoyed the pasties. Just like the ones I had in Cornwall decades ago.

How to heat it

Oven or air fryer, until it is piping hot right through. The microwave would undo all that thumb work, and nobody wants that on their conscience.
