Hartley's Raspberry Jelly is the block of rubbery cubes you pull apart, melt in a jug of boiling water, top up with cold and leave in the fridge while everyone tries not to poke it. Every British kitchen has made it. Most British children have eaten a cube straight from the packet and denied it.

It sets bright red, wobbles properly and tastes of raspberry exactly the way you remember. Turn it out of a mould and somebody will clap.
