Throwback post! One month into Halifax!
"It feels like we have been here forever but that is just our 3rd week coming to an end!
We never planned for the reaction to our shop being what it has been, the volume of bakery going out every day as well as all of the amazing reviews and feedback has been nothing short of incredible.
Through our social media platforms we have tried to be as transparent as possible, from our journey to opening, the delays along the way and now the day to day updates at the bakery.
There have been other hiccups, including delays to equipment, most notably at this time our walk in fridge/freezer. The biggest problem this causes is the likelihood of running out of stock! We have been trying to balance how much raw meat we order for products like sausage rolls and Cornish pasties, with how many of these products we can bake, chill then put out. The problem is, looking at how many of each item we are selling a day, there’s simply not enough space for the ingredients and the baked stock! We hope to have the walk-in unit installed in September!
We also overestimated what our ovens would be able to do. They are currently both running 10-12 hours a day, 7 days a week and it is safe to say they are struggling. A rotating rack oven is being worked on and we hope to have one installed in around 12-15 weeks which significantly increases how quickly we can bake our products! This will also coincide with the installation of our fryer and ventilation, so until then we unfortunately will not have Scotch Eggs on a regular basis! (We are working on a deal to rent a commercial kitchen to do them every now and then!)
Tomorrow we should finally receive a huge order of imported groceries, so Pot Noodles and Cheese & Onion crisps will be available in the shop for the first time! (We'll post when!)
The entire team is working so hard every day to keep the counters full, providing the friendly, fun service we’re already known for providing and ensuring that we have an acceptable range available for anyone visiting, whether it’s their first time or their 8th this week! (You know who you are!)
That being said, if we don’t have exactly what you’re looking for please don’t give the ladies at the front any stick! This behaviour has been few and far between but it’s me at the back you need to direct your displeasure at! So if you do plan to cause a fuss, ask for Aaron, I’ll give you an apron and you can give us a hand in the bakery!
